Spring time in Umbria: the fields are covered with poppies and wildflowers, there’s a buzz in the air as each household prepares for an Easter feast, the smell of soil is everywhere as farmers labour over their fields - prepping soils for the next planting (sunflowers come next, debuting in July).
The cuisine shifts from hearty winter dishes to lighter offerings centered around wild herbs and the skinny asparagus stalks forged for in our surrounding valley (hint: look for them under the olive trees).
Many of the newest vintage white wines are being released at nearby wineries, making our favourite saying: “what grows together, goes together” live on in our bellies, palates, and hearts!
